Gluten-Free Recipie for Your Catering Business

Last week I had to take some gluten free dishes to our church luncheon, I know that I cook often gluten free, however it stopped me in my tracks as I was going to serve gluten free dishes to someone who was cooking and baking gluten free all the time. When I do my own cooking, it does not matter if I have some gluten here or there, now it mattered.

I had planned to make a spinach pie. My pie crusts are normally made with oats and spelt or rye flour. So this time I could use neither of those grains. I did have some Maize meal and soya flour in my freezer (I keep most of my flours in the freezer as they last longer that way and I avoid the bugs). I had written down a gluten-free flour mix some time ago, and I saved it. The question now was where I kept it. I did not have time to waste and started my baking for the day. It turned out really great. The taste was just what I wanted, and I loved the flavor and crunch. I was so worried that the crust would be rock hard; no, it wasn't, it was just right. Firmer than my normal pie crust, but perfect.

I will try this crust recipe in the future for some cookies though, with the addition of some sugar, maybe dates and nuts. It should be fun. I'll let you know how that will go. So here is the recipe for you to try.

Spinach and Corn Pie, Gluten Free

  • 1 cup Maize meal
  • 1 cup Soya flour
  • 80 gr Butter
  • 2-3 Tbsp. Cold Water
  • 1 pack of frozen Spinach
  • 1 Tin Corn
  • 4 Dried Tomatoes, chopped
  • 3 tsp. Capers
  • 200 ml. Cream
  • 4 eggs
  • ½ cup grated cheese
  • Salt/pepper to taste
  • Parsley Coriander Italian Herbs Curry Paprika
  • Heat the oven to 180 deg C
  • Grease a 25 cm pie dish Place the butter, maize meal and soya flour in a food processor and mix until all looks like breadcrumbs. Add the water and mix until a dough ball starts forming.
  • Place dough into the pie dish and bring up on the sides about 3cm.
  • Heat the spinach in a microwave or in a saucepan on the stove. Let it cool a little.
  • Place the eggs, cream, sun-dried tomatoes, capers, and all herbs and spices into a large bowl and mix well.
  • Add the grated cheese and lastly add the spinach.
  • Mix well. Place the filling into the pie shell and bake at 180 deg C for 45 minutes or until set and golden.
  • This pie will be enough for 12 servings.
