How do you know when it is mold?

I work at a fast food shop and went to go clean the pop dispenser. As I cleaned it, I realized it doesn't seem to have been touched for a long time.
I noticed a gunk on the ice dispenser tube and started cleaning through the tube, and realized it was black.
Friends have told me it is mold.
Can mold grow from an ice machine?
